What I Ate in a Day: Coach Kim

Our members are often asking us what we eat, so we decided to compile a blog series on this very topic! Over the next few weeks, each of the CORE coaches will share with you a look into a typical day of food for them. Enjoy!


2 pastured eggs fried in butter, 1/2 a piece of sourdough toast with butter, smoked salmon tartine (cucumber slice with cream cheese, fresh herbs and smoked salmon),  and a small salad of romaine, tomatoes, extra virgin olive oil and sea salt



​Iced coffee with hydrolyzed gelatin, heavy cream and homemade mint syrup

LUNCH: 12pm

Loaded Salad with romaine lettuce, sungold tomatoes, avocado, kohlrabi, carrots, pepperoni, turkey, cottage cheese, goat cheese, and hard boiled egg with Primal Kitchen Caesar dressing

SNACK: 4pm

Whole milk plain yogurt, raw honey, blueberries and homemade granola


Spaghetti made with zoodles (zucchini noodles sauted in coconut oil), tomato sauce, Italian sausage, fresh thyme and basil, and topped with goat cheese



Throughout the day I drink water with a slice or two of lemon. 

And I don't have a photo of it but I also enjoyed some dark chocolate with sea salt πŸ™‚ I like the Equal Exchange brand because it's fair trade and delicious.
